JOB SUMMARY: Responsible for the overall cleanliness and sanitation of all kitchen work areas. Assists culinary team and stewarding staff as directed.

Sweeps and mop all kitchen floors, walk in coolers, freezers and dry storage areas.
Sweeps and mops buffet service area during hours of operation.
Operates related cleaning and floor maintenance equipment as required.
Empties trash and cardboard throughout kitchens.
Washes and cleans all walls according to cleaning schedule.
Gathers all linens to proper area for pick up.
Pulls racks from walk-ins and freezer units to clean as scheduled.
Replenishes or replaces buffet ice daily.
Assist banquet department both on and off property.
Maintains all Food & Beverage hand wash sinks.
Maintains cleanliness and organization of all Food & Beverage chemical storage areas and mop sinks.
Responds promptly and professionally to all Food & Beverage clean up calls.
Assists with the duties of the Food Porters when needed to ensure timely storage of perishable goods.
Performs other job-related duties as assigned.
LICENSES OR CERTIFICATION (required / preferred):
Valid driver’s license with an excellent driving record required.
Valid WA State Health Card/Food Handlers Permit required.
EDUCATION, EXPERIENCE AND TRAINING FOR POSITION (required / preferred):
High school diploma or GED equivalent is preferred.
One (1) year stocking experience preferred.
Experience cleaning various Food and Beverage areas preferred.
SPECIFIC SKILLS/KNOWLEDGE/ABILITIES REQUIRED FOR POSITION:
Must be well groomed, professional and be able to follow specific instructions.
Must have working knowledge of MSDS and the chemicals used in the department.
Ability to interact with diverse individuals and function as a member of the team.
Ability to complete work in a timely and efficient manner.
Ability to handle stress under pressure.
Ability to recognize smells, fumes, and odors.
Knowledge of operation, cleaning, and maintenance of various kitchen machines.

Regularly required to stand for prolonged periods of time; walk; use hands and fingers to handle or feel; reach with hands and arms; climb or balance; stoop, kneel, crouch, or crawl and talk or hear.
Ability to regularly lift and/or move up to fifty pounds (50 lbs.) with or without assistance.
Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and the ability to adjust focus.
The noise level in the work environment is usually moderate to loud.
Some essential functions of the job will be performed within a smoking environment.
Regularly exposed to wet and/or humid conditions; chemicals and extreme temperature changes.
